How wholesale vegetable and fruit rates work

Why vegetable rates change every day, what a mandi rate is, and how restaurants and hotels in Udaipur can plan purchases around daily wholesale rates.
What a mandi rate is
Most fresh produce in India is traded through a mandi — a wholesale market where farmers and traders sell to buyers each morning. The rate for each item is set by how much arrives that day and how much buyers want. When arrivals are high, the rate falls; when rain, heat or a festival cuts supply, it rises.
A wholesale supplier buys at the mandi rate and adds the cost of sorting, packing, transport and delivery. That is why a supplier's rate moves with the mandi.
Why rates change every day
- Weather — heavy rain or a heatwave damages crops and slows transport.
- Season — the start and end of an item's season bring the highest rates.
- Festivals and weddings — demand rises sharply for some items.
- Transport — fuel costs and long-distance supply add to items brought from other states.
- Quality — the best grade sells at a higher rate than mixed quality on the same day.
How a kitchen can plan around it
- Check the rate list before you write tomorrow's order, not after the bill arrives.
- Watch the change column: a rate that has risen for several days in a row usually means the season is ending.
- Keep two or three menu dishes that can switch to whichever vegetable is cheaper this week.
- Order what you will use; extra stock that spoils costs more than any rate difference.
Our rates in Udaipur
NutriDelight publishes the current wholesale rate for every item on its Udaipur rates page, with the date each rate was set and how much it changed since the last update. The rate you see when ordering is an estimate; the invoice is the final price for the order.
Questions
Why is the rate on my invoice different from the rate I saw?
Rates shown when ordering are estimates based on the mandi. For items billed by weight the bill uses the weight measured when your order is packed. The invoice is the final price.
How often do wholesale vegetable rates change?
Daily for many items. Staples like onion and potato move more slowly; leafy greens and seasonal fruits can change sharply from one day to the next.
